I normaly dont even mention I am not gay. I use the same reason I use for straight guys. "Sorry but I am married/ not single/ have a partner/etc. "

I'd accept it as a compliment.
I remember one time, I went to a bar with my ex and his friend. They saw two girls that they were interested in and they started buying them drinks. [I know, huge red flag that my ex is buying a girl drinks and obvs flirting but I was dumb and didn't see the flag]. The women though kept accepting their drinks, but started buying my drinks and flirting with me. The women told them numerous times that they weren't interested, and continued flirting with me. Lol.
Nevertheless we left/I left with their number and a very mad ex. Lol

This to me is the polite route. I would say, “Well that is nice that you asked so kindly, I’m just not interested in dating anyone. Hope you understand. You’ll find a nice man in the future, you will make him happy.” or something like that.
This has happened to me, more than once. I was like: "Really? OMG, that is so sweet of you, and I appreciate the compliment, but I’m sorry I'm not gay. But if I was..."

No id remain respectful, if they aren't disrespecting me, there's no reason to be disrespectful to them, I had a gay compliment my jacket before and even tho it made me uncomfortable, I just said thank you and that's it
I would simply explain that it's not my story
it's the best to keep it clear without a space for assumptions...

I've tried to be cordially. Tried being friends and all they wanted to do is suck me. It was an endless charade of me saying no, felt like how a women feels

I'd tell them I'm not interested because I already have a boyfriend
