i mostly shoot for the Thai fried omelet or I might shoot for over-medium/easy... sometimes french & fluffy scramble is just right. that's the magic of egg, manipulated protein nectar. I'm partial to pickled egg which is also boiled... and a good quiche in a real pie cruit? oOooee
but kai jiao can be stuffed with anything and having that fluffy, soft yet cripsy egg omelet with savory hints of fish sauce and lime juice against jasmine rice and the refreshing cucumber, maybe some tangy hot sauce... it gives me that "centered" feeling after eating it. And since you want the oil to smoke just a bit before you add your egg, a bit of mustard oil is truly nice if you've got more with it too, like vegetables or tomatoes or another meat like sausages or ham or potatoes
other - being all of the above, PLUS
deviled, scotch, in the form of pancakes/pikelets/waffles, in the form of cake/loaf, sometimes raw in v8 juice, as part of a salad, as a binder in my burger patties...

Over easy with buttered white toast so you can break the yoke and dip your bread into it. As a little kids I called these eggs “dip eggs”
Omelettes are my favourite but I like all ways depending what I'm eating. Eggy in the basket is nice.

Most of the time, I make my eggs poached.
I think it is the fastest/ least fiddly way to make a runny yolk egg.
But when I have free time, I also make deviled eggs.
