I think that might be quite regional. For me, broccoli and cheese (even though it is so common in the US). I told all my friends here in Japan about it and they thought it sounded so strange until I made some for them, and then they thought it was awesome. Also beans on toast for people outside the UK. For people outside Japan who aren't Italian (I think it'll really upset Italians), spaghetti cooked in ketchup (aka Napolitan spaghetti). Eggs (all sorts) mixed with salsa is another for those who haven't tried it.

A well ripe avocado in a sausage risotto.
I didn't like avocado and bought one in a "let's change my mind" attitude. Left it there until it was ripe to the extreme becouse I never actually wanted to taste it, then finally threw it into the risotto just so I wouldn't waste it and found a new recipe
I used to have quite a few odd things, but now I've gone blank!
I definitely agree with another comment that fish pairs very well with macaroni and cheese. I like to mix a package of salmon in mine!
I also like to put ranch (but only the kind made with a packet or homemade; I've never found a very good pre-made bottled/jarred ranch dressing) on taco salad and salmon patties.
Soft pretzels with honey; Tortilla chips baked with American cheese; sweet potatoes in a burrito; Thanksgiving slaw; blackberry keylime cheesecake. I'm sure there's more.

One that a lot of my friends consider "weird" is alcapurrias, which is actually a regular dish where I'm from (Puerto Rico). It's basically a combination of plantains, salt, and meat, but the way it's made makes it really good.

I saw some "creamy goat cheese with cinnamon and cranberries" at Aldi.
I made an even better version at half the cost or less from softened cream cheese, Craisins and cinnamon. The warm spiciness of the cinnamon, sweet/tartness of the Craisins, and the creaminess of the cream cheese are a great blend!Spicy ramen noodles on a piece of lunchmeat turkey, then aqueeze some lemon juice.

Bananas on bread is understably delicious but it's even better if you add sour cream. Some how bananas make it taste like whipped cream. Must be the sugar in them.
