What Texas and Arizona do is Tex-Mex, more of an Americanized version designed to appeal to gringos. It's not bad, but it's not authetic Mexican cuisine which is much more prevalent in Califormia. Only in California will you even find numerous restaurants that specialize in Mexican regional dishes like Baja California, Poblano or Oaxacan foods. In Texas, it's just throw some beans, cheese and salsa on it and call it Mexican.

  People eat fajitas at On The Border or Chili's and think it's authentic Mexican food. They just don't know. Don't get me wrong, I love fajitas too but it's like people who have Chop Suey or General Tso's Chicken and think it's authentic Chinese.

  I will say there are some authentic Mexican restaurants in Arizona, especially in Tucson where I have been many times but they are nowhere near as prevalent or varied as they are in California.

I grew up in California and now it’s all whitewashed you can’t get authentic Mexican food anymore. Housing has pushed “la raza” out and it’s hard to eat the local foods. Not the same anymore. I’ve lived in California since the 80’s. Trust me not the same.

In Dallas, I went to a mexican restaurant, and due to their liquor license they couldn't sell liquor drinks. But they could give them away. So you ordered your meal and had all-you-can-drink margaritas. Who cares what their food tasted like, it was the best.

Mexican food in California is Tex Mex too, whachu even takeen about? The best Mexican food I’ve had is at mi tias house and that’s in Tejas mija.

Actually all three states have great Mexican food and I've been in all three states and tried Mexican food in all three states so it's an informed opinion to that extent. I particularly like Arizona however.
