I'm a big fan of fried bull nuts.
Having them sautéed in sauce as pictured might require some enticement.

I'd be game to try the rest of your selections, even without some Benjamins to entice me, although I would definitely play a situation with a stranger to secure some Benjamins if I thought it to be possible.

I might as well just try all of them. I need some drinks first though. I have tried testes and fish eyeballs though on that list. Roasted rats actually sound like it might be pretty good to me. Tarantula and worms are the main challenges. But I'll give them a try if I'm at a place that serves them.
None of the above would be ideal obviously, but it I HAD to choose one, I would pick the cow testicles. Hopefully they would just taste like beef...

There is no such thing as "cow testicles" because cows are female bulls. Bull testicles are quite delicious when you deep fry them. So yeah I'm going with Rocky Mountain Oysters.
Cows are female bovine, which means that they don't have testicles (city boy). Regardless, Rocky Mountain oysters (bull testicles) are actually quite tasty. Bring them on- preferably with ranch dressing.
I could probably do the fried worms without 🤮🤮. They look like french fries.
i won't eat eyes. but everything else, i'll want to try if professionally prepared. we did a dissection of a cow eye in school. this stuf is so extremely leathery. i wouldn't wanna attemt and eat that shit.
