I LOVE 'EM! Just regular American pancakes are great if they are made right. My favorite topping is melted butter and authentic maple syrup.
Sometimes my wife adds blueberries to the batter. Sometimes she makes warm syrup by combining molasses, butter and maple syrup. When out of syrup, I've topped them with melted butter and brown sugar.
A friend's vegan wife used to substitute bananas for eggs and her pancakes were delicious.
There are lots of other pancakes from other parts of the world. I've only had a few but they are yum!

I can make super fluffy American pancakes, French crepes, and big flat German/Dutch pancakes. Your pick!

My husband likes them with pure maple syrup and powdered sugar.

Sounds like you love good food and have a knack for cooking and baking. I looked up pancakes and found stuff like Indonesian serabi, Korean jeon, Russian blinis, Dutch poffertjes, Finnish pannakakku, and then there are savory pancakes made of potatoes and other things.

For a long time I hated pancakes. When I was growing up, my mother made pancakes every Saturday and Sunday morning (my father liked them) and they were plain with no taste.

As I got older, I found that blueberry pancakes with butter and maple syrup on them are very tasty... occasionally. Two sausage links on the side with a glass of orange juice and cup of coffee makes for a complete breakfast.

I love most breakfast dishes. I tend to stick with savory over sweet dishes. Pancakes to me are like donuts. Too sweet. I’ll eat them on occasion but I truly prefer a Belgian Waffle or French Toast over a Pancake. Give me eggs with hot sauce, bacon or sausage, and buttered sourdough or rye toast. Yum!!

We make them on a pan. It's a thin cake in a shape of circle. We add a filling (for example jam) and fold it two times (first to half-circle then to triangle).
