Yes. I love having the right knife at hand for the right task.
Don't knock paring knives--they happen to be great for paring, among other light knife duties, but they are not what you need when it comes to efficiently dealing with larger cutting tasks.
If you like to prepare fish dishes using fresh fish, an actual fish knife--large cousin of the paring knife, long, thin, and very sharp--makes an otherwise often awkward task so much easier.
A kitchen cleaver is good for almost any cutting job but also really handy for dealing with carrots.
A quality kitchen scissors or shears is also a good thing to have around, ideal for cutting up a whole chicken, for example.
Yes I know how knives work. I'm a trained chef lol. I've watched people use paring knifes to cut up onions and it's scary.
My dad gave me two of his old German steel chef's knives after I moved. I've never known anything else, so I assume that they're good. He told me that they are awesome. He tried showing me how to use a sharpening stone, but I don't have the patience, so he bought me a knife sharpening set. I haven't unboxed it yet, because my knives are sharp as hell, like accidentally bump into it while washing and you have a bad cut kind of sharp. And my dormmates don't use my knives, they've been afraid of them since one of them cut themselves to the bone.
But I have an entire knife set, and I liberally use my cleaver. I think that's why my knives are still sharp.
Yes a few of them I consider the tool and no matter what kind of work I'm doing I like to have the right tools it just makes your job a lot nicer easier and cleaner with anything you do in life having the right gear of the right tool just makes it a lot better

I have a full set of 'chef's' knives but I tend to use 3 the most a 10" Kitchen knife, 6" Paring knife, and a 8" Fillet/boning knife.
I scratch cook a lot the different sizes of knife makes the job easier.
I have a stabby and a cutty knife...
I actually don't know what knives I have, they have all been packed away awaiting me getting my own kitchen (ok, house) again.
I have two chefs knives and I clean and dry it when I finish using it and put it away where it goes... I also clean dishes I mess up while cooking so when I am finished eating I have only one plate to clean.

Nothing. But to cut everything it's a bit inefficient.
so is using a chefs knife for everything. there's a boning knife, a bread cutting knife, a chinese cleaver, and a bunch of others that i can't think of right now.
Not everyone is going to have a full set of knives. I just find it awkward watching people try to dice an onion with a paring knife
