First, wash the shrimp in cold water.
Second, peel the shell of and save it.
Lastly, cut the shrimp down the middle (front and back). Remove the intestines (located at the top of the shrimp) and apart of the shrimps nervous system (it is located at the bottom of the shrimp).

It is optional to do all this, tho. You can eat it with everything on.

Shrimp shell is good calcium, so you can use it to cook, or eat it. It is better dry, tho. 😊

Using a sharp paring knife make a shallow incision the length of the back from tail to head and lift out the poop vein to remove it and discard, remove shells and head and rinse with cold, clean water. Rest on paper towel and pat with a paper towel to dry.

Personally I keep the shells and shrimp head as they contain a ton of shrimp flavor and cook them in a white wine and garlic butter sauce once the sauce is made I discard them. I prefer using Argentinian wild caught red shrimp sometimes also called lobster shrimp.
