Cream corn puréed.

i use homemade chili paste.

I use three meats: 1 lb of maple bacon. 1 lb of 75% lean ground beef. 1 lb of diced beef.

marinate the two lbs of beef in your preferred seasoning and liquid smoke.

and if at anytime it’s too watery I add finely ground corn flour to thicken it little by little. Corn flour takes a few hours to soften

and cheese balls are an optional thickener and it adds cheese flavor.

you can taste the maple from the bacon, sweet from the corn, smoke from the liquid smoke, salty from the marinade, cheese from the cheese balls (they dissolve), and the slow burn from the chili paste.

i didn’t win the competition because I refused to use beans or tomatoes but they ate all of my chili and everyone else had leftovers.

Nothing really unique, tomato juice, ground beef, Brooks chili hot beans, occasionally green peppers and onions. Add chili powder to taste
