not like the sum of its parts..
garlic, onion, tomato, banana, chile
apple, nutmeg, chocolate...

is acid
is bitter...
is spicy
Just like Mexico tastes like Mexico...
If you want to celebrate, you make mole
There are as many types of moles...
as there are celebrations in Mexico
Mole, it's not just sauce..
it's passion
it's happiness...
it's celebration
it's a party in our mouths...
Our mole madre is a recipe of black mole...
It has more than 80 ingredients
and it's the most complex sauce to prepare...

It's like a living being, always changing...
It's a mole in constant renewal
That's why we serve it by itself...
to give it its real value
so you can really concentrate on its flavor...
The history of mole is the history of Mexico...
a history enriched with migration and racial mixture
the combination of several cultures and different times...

is complexity and diversity
is richness...

It's the culinary tradition of Mexico... "

This evening we'll be eating vitel tonné, which is a popular dish in my area - cold lamb meat slices with tuna sauce, mayonnaise and greens.
I like it, especially homemade when I make the sauce myself.
I'm not sure what's a typical meal here but there's definitely a fondness for comfort food like curries, chilli con carne or pasta. The dish we're most known for is cawl, a simple soup made from lamb, leek swede, potatoes and parsnips.
There's no official recipe, different families will cut the veg anything from little cubes to great big chunks but one things certain, when the big pan comes out you're eating the same thing for the next 3 days. The worst version was school dinner cawl which had grisly lamb, half cooked veg and a stock that tasted like dishwater. The best is the last bit that'd welded to the bottom of the pan after 3 days.
I think this is call fast food nation. I don’t eat them.
we are also very diverse here…so we are fortunate to eat diff food every week.
