What type of skillet do you prefer to use when cooking?

I use all of them
Cast iron/seasoned carbon steel - Pros: very good heat distribution, storage and transfer, - cons: moisture damages seasoning. Good for steaks, meat and fish
Stainless steel: - Pros: good heat distribution, easy to clean, can handle moisture - cons: needs fat for not being sticky. Good for sauces, mushrooms, noodles, veggies...
Teflon and other gimmicky anti stick s... - Pros: not sticky without much fat. - cons: coating isolates heat, temperature and temperature shocks damage coating, hard tools damage coating, loose coating particles aren't especially healthy. Good for eggs, pancakes and food that doesn't need heat.

See it’s nice to hear from somebody who clearly cooks. I haven’t used carbon steel yet but I am thinking about splurging on a larger skillet and it has the advantage of not being as heavy as cast iron. All I have at the moment is a small cast iron skillet and a larger stainless steel one which covers most of my need. But yes, not exactly ideal for a steak. Never been a big fan of non stick pans. Because they never last me more than a year, and food will still stick anyways.

Fair, that’s part of why I don’t have a larger cast iron one at the moment. Love my little 4 inch one and I wish it was bigger but the weight is a factor. Maybe I will splurge on a carbon steel one some day.

I just use whatever's available; I'm not so picky that I'll turn down a pan just because of its material.

For the record, though (since you didn't ask, and the sorry state of curiosity in this day and age offends me), Teflon is only stickless on one side; the other adheres quite well. And it's VERY good at not sticking to things: you can apply superglue to a Teflon pan, and it won't stick. Even geckos, which can support their own weight hanging directly upside-down from freaking glass using van der Waal reaction, can't climb up Teflon. They just slide right off.

Depends on what I’m cooking. Stainless style blows though. I mean it doesn’t rust, but everything sticks to it if you don’t use butter, oil, grease, whatever, and really keep an eye on the temperature and stirring the food etc. Cast iron really isn’t that much of a problem for me. I just made fresh cornbread today in my skillet. You just need to know how to season it. Plus I could bludgeon someone to unconsciousness with that thing. Teflon may give them a bruise. Maybe.

i used the cast iron didn't really care for it the food constantly stuck to the pan so i went back to using nonstick teflon like the old saying goes if it ain't broke don't fix it. plus cast iron pans rust when cleaning in a dishwasher

Yeah, I do that, but have never had results quite as good as I have with cast iron. At least you can soak stainless steel if it gets bad. Or use steel wool on it.

The key with cast iron is seasoning it well, and maintaining that seasoning. It's easy to ruin it if you're not careful. One of my skillets originally belonged to my grandmother and is about 90 years old. It's the best one I have.

honestly i always wanted to get steel pans. i tried one time but i just can't get them seasoned in a way that stuff doesn't stick to them. on high heat they work fine but if i want something not completely charred, it'll stick like glued in... so i'm stuck with teflon crap

I haven’t tried carbon steel yet. But my cast iron is working really well. Still needs a little oil for most things, but even if something does stick it’s easy enough to clean. Just can’t soak it in water.

my particuar problem in steel pan was stirr fried eggs. i like them on the verge of still being liquid. so can't really put the thing on searing heat. and then half of it gets stuck in the pan so i get to throw away half the meal xD

Every time I use cast iron, everything sticks. Lol. I used them for a long time and seasoned them. Stainless steel heats up fast and cooks ok.

I have only more recently started using cast iron and absolutely fallen in love with it. Got a shitty little 4 inch pan for free and spent time cleaning it down to the bare metal, because it was really bad. Seasoning took a bit of trial and error, and then redoing it again. But for the last 9 months or so it has been amazing.

I have been doing eggs in mine pretty well. Works better if I add the fat (butter, oil, whatever) before I heat up the pan and let it heat up with the pan before adding the eggs.

Even the upkeep hasn’t been that bad so far. Like you have to actually (which apparently a lot of people think you don’t) clean it but once it has a good seasoning its super easy to clean. And you can’t leave it soaking in water, but that’s not a very big deal. Hell I have even used steel wool on mine once or twice and had no issues. Just had to be a little more careful in the future.

Exactly. Just some basic experience and being careful, you'll be right as rain. Hell all I do now, is rub it with salt, wash it off and dry it, then add some more oil or bacon grease in a thin layer, cook it in and remove it from heat. Easy pussy

If I do get something stuck to it, which happens from time to time, I just keep it hot, pour in a little water and it comes right up, like deglazing. And if it’s pretty oily I will use soap and a wash cloth on it. Just have to make sure it is completely clean and dry before putting it away.

When I first got it, it had alternating layers of crud and rust stuck to the bottom like a quarter inch thick. Each time I started to find some rust I thought I was finally at the end only to keep going. Now you can see the name stamped into the damn thing. Handle is starting to need a little work again though. That’s where I always grab it, but never oil it. Should be easy enough to fix this weekend.
