A while back, a girl on GAG turned me on to Gochujang sauce. They carry it in the store.
It is a red, Korean chili sauce. It is thick but not as thick as ketchup. It is hot, kind of sweet, but not vinegary like other hot sauces. I love it! I don't know why almost all other hot sauces are so vinegary. I generally don't like adding vinegar taste to my food.
I put it on Mexican food and add it to chili or anything else that I want to add some tasty heat to.
I also like Mae Ploy sauce. It's from Thailand. It has tons of red pepper flakes in a sugary syrup. The only time I have it is as a dip for roasted chicken breast. Or sometimes I'll add some to a roasted chicken breast sandwich.
Cholula. Years ago on a vacation, a server at a Chili's restaurant got me hooked on it. After bringing our food, she asked if we needed sauces/ketchup. I asked if there was anything that flavor in addition to a touch of heat, not like the old regular Tabasco which was just a bottle of fire back then. She said she had just the thing for me, brought back a bottle of Cholula, she nailed it, and I've been with Cholula ever since.

Demi Glace + roasted mango or peach + roasted pineapple + shot of Tabasco. It's European umami, Asian fruity sweet sour and American sharpness mix.
Grew up on Crystal and Tabasco and I do Creole cooking so they work best with my menus.
Hot sauces are a realm of endless exploration! My personal preference leans towards the bold and flavorful sriracha, with its perfect balance of heat and umami. When I was in elementary school I use to like Tabasco and Crystal, but by the time I was in middle school they just tasted like vinegar. I never liked Texas Pete. It just has a bad flavor. Louisiana is the best major brand of hot sauce. I've had all the Mexican ones at various times but they are remarkably unrememberable. I never said, hmm what is this a good hot sauce I need to get it when it came to a Mexican hot sauces.
we never really do "branded & bottled" down here... or salsas are home made
and, as an exception for most people around here, I don't really like hot spicy sauce lmao

I love both of those types. If I’m eating Mexican food then I’m choosing Mexican hot sauce definitely 💯.

I prefer to mix hot sauces. Some are hot, but just fucking awful to taste.
My preferes mix is Jamaican hot sauces with Spanish hot sauces.
I definitely tend to favor Mexican/Tex-Mex, but I go through a decent amount of Frank's Red Hot for wings.
Hmmm... C) None of the above... sort of. While I lean toward the Mexican ones, what I really prefer are the ones like Mango Habenero or some other fruit spice. I also love Caribbean hot sauces. They're nothing like traditional Southern ones.

No hot sauce for me. Hot sauce and me don't get on well together.
Hot sauce that's not sour nor have any other flavors in it. I just want the "hot" not the "sauce" especially if the food already has flavors.
I prefer Indian hot sauces, but I like Mexican and Cajun too.
