This happened last weekend. We were having a cookout for mothers day. I did smoked brisket, pulled pork, and some smoked turkey. Along with potato salad, mac and cheese, and home made baked beans. Oh and home made BBQ sauce. My neighbor came over and demanded i stop cooking "RIGHT NOW" or i would face the consequences, that i have no right to expose her to my "Meat smoke", and that she is vegan and i should respect her for that. I politely yet firmly suggested she needed to leave and that i had no obligation to do anything for her. My neighbor called the police on me, Apparently they reported to the police officers that i was setting fire to the trees and trying to set fire to her home. When they showed up and saw what was actually going on, i was asked to go about my business. I, because i love the police in my area offered them their pick of anything they wanted food wise. A few of them partook. Now my neighbor is suing me for being a menace to the neighborhood. Not sure how im going to handle this.
First off get a copy of the police report if there is one, from her calling out the Police and Affidavit's from the officers who attended if you can, then SEE A LAWYER/SOLICITOR,

Get them issue a counter suit for harassment, a cease and desist, and Temporary Restraining Order, or their equivalents in you local law.
And start a log book detailing any and all interactions with that neighbour AND RECORD THEM (video/audio) IF POSSIBLE.
If she causes any damage/harassment call the Police immediately and get copies of those reports as well.
Then ignore that neighbour, which seeing it’s a woman will drive her absolutely nuts.
This case sounds like this case in Perth Australia, and one by the same woman 3 years earlier, what a sense of entitlement!!

Suing you for what?
The neighbor is causing her own distress.
Where I live, her behavior would be addressed as harassment.
Police usually attempt to find the least disruptive solutions to civil problems, so I can see their approach to the BBQ encounter.
If your neighbor follows through on her ridiculous threats, she'll pay the price for doing so.
The tide is beginning to turn on these self-entitled entities.
By not allowing them to continue their BS without calling them out on it, their retreat will be forthcoming.
There's an illegal barbeque technique here where you hang a whole sheep from a tree and cook it by burning the wool off with a blowtorch. Now the question is it legal where you are and would it piss your neighbour off.
Some of my family are vegan, so I understand to an extent.
But the fact she's demanding you to stop cooking meat just because she's against it is crazy.

Countersue her for harassment, and request court and attorney fees.
Countersue for harassment and invasion of privacy and put her through the ringer.
You should do a full hog roast.
Hahah.. I love you
