Broccoli, zucchini, tomatoes, though those are considered both a fruit and vegetable, corn (It has to be frozen. Canned corn taste nasty), peas, carrots, and beets. I was recently diagnosed with diabetes, and I'm supposed to eat like 8 servings of vegetables a day. Crazy!

Someone close to me was recently diagnosed with diabetes. He's probably had it for a long time before getting the diagnosis. Every blood test he took his triglycerides were always high. That should have been a red flag to his doctor.
Anyway, so you have to eat 8 vegetables per day. I was wondering what else are some good foods for diabetics. Any suggestions? I would appreciate it 🙂
@sage2021 Sure, no problem! Any types of grains are good. Bread, pasta, cereal. They help keep glucose levels stable. Dairy products are also good. Milk, cheese. They contain fiber, just like the grains. Fiber is key. It keeps blood sugar from going through the roof. Tomatoes are great for controlling glucose. Most vegetables contain fiber, green ones the most, like pees, green beans, lettuce, so vegetables are important to get into the diet.
Lettuce also contains fiber, which will keep the numbers down. The trick is to eat these with a regular meal, so that he's getting all the nutrients he needs, but in smaller portions.
For example, a piece of chicken for protein. A serving of broccoli for fiber, a side of cottage cheese for calcium, a side salad for fiber, and a dinner roll.
The reason is better to eat a whole mean rather than just eat a salad by itself is because a salad by itself isn't enough nutrients and if a person is eating enough, their sugar can actually skyrocket, or even plummet. It goes out of whack.
My endocrinologist told me that everyone should eat 6 times a day, 3 meals, 3 snacks. Now, some people have to go on special diets because of the different types of diabetes, but unless your friend has a doctor that tells him otherwise, 6 times a day is important. He should also keep track of his carbs per meal. (Carbs per serving). I

Counting carbs is easy to. You just look on the back of a food package, [Box of cereal, macaroni and cheese, can of pees, etc) and where it says total carb per serving (Not package), you follow that.
Every diabetes carb goal is different. Typically, men's are between 55 to 65 max per meal and woman are 45 to 55 per meal, unless otherwise by a docror.
So, for example, a piece of steak is 20 carbs, a baked potato with butter is 15 carbs, a side salad is 10 carbs, and a beverage is 10 carbs. There's 55 carbs. It doesn't have to be exact though. Obviously, not serving amount is the exact same size, lol.
But I thought I'd throw the carb counting in there to make it easier. :)

If having a meal, broccoli or green beans are my favorite.
If a salad, a big mix of iceberg lettuce and other veggies with Italian dressing or a Caesar salad.
On sandwiches? Lettuce and tomato.
All kinds of veggies… you name it.

2. And a type of root only eaten during New year.

I like veggies a lot! The only one I don't really like is eggplant.
I'm not a vegetarian but I'd much rather have a plate of veggies for. dinner than anything else.

I did forget garlic...
I like to break the cauliflower into tiny bits and roast them until they are brown... and then throw in two eggs. When everything is cooked I turn off the stove, smother it all with cheese, make my coffee and then sit down and feast away.
The roasted cauliflower makes it taste like roasted meat.
Amazing that such a bland veggie takes on such a robust flavor with the addition of a little heat.
Kale. And broccoli.
