It depends.
If I'm having them by themselves, lots of salt and maybe dip them in ketchup.
If I'm having fish and chips, I like tartar sauce with both.
If I'm having them with barbecue, I like to dip them in BBQ sauce.

Other dips can be created by combining different things with mayonnaise.

I selected salt but I also like ketchup and mayo.

(Just as a note, all the U. S. users will think you mean potato chips when what I think you mean is french fries)

If you mean french fries, I like ketchup, cheese, mayo, and sour cream. I love loaded fries because of the cheesiness. Other than that, I dip or put ketchup over regular fries.
