I'm going to go with buttermilk- some sugars don't mix well. Maple syrup and blueberry is a bit much (especially if it's REAL maple syrup, which is powerfully sweeter than the artificial stuff), and syrup and chocolate is just kinda excessive.

Now, if you're using a different topping, it might be a different story.

I'll just say blueberry since it pairs well with sausage links & scrambled eggs. Blueberry, lite, buttermilk, or maple syrup is good. Strawberry pancakes are even better though.
