Unless you mean like replacing it with a veggie burger, other than that it would just be a very simple vegetable sandwich on a bun without a patty on it entirely.
Just replace the cheese with lettuce, and you'd get what you're looking for.

Meat & Cheese are the two most important parts of a burger... unless it is a vegi-burger... but the burger itself should always be mostly protein one way or another, so bean burgers will suffice.
Can't get rid of the cheese though.

I'll eat an Impossible Burger, as long as it has cheese on it.
Hamburgers are a no-no.
