cheddar.
I like parmesan, Swiss and mozzarella as well but cheddar is my favorite. I can eat cheddar melted and on things but I can just pop it in my mouth and eat it by itself.
I don't like Swiss like that. I like it melted on things. I like mozzarella on pizza but not plain.

Dunno if I can narrow it down to just one, but pepper havarti, caraway gouda and smoked gouda are high on the list. I've never been a fan of pungent cheeses like blue cheese though. Typically, the most pungent I like are Pecorino Romano, asiago, feta, etc.

Oh man…. cheese is so good, lmao. I like a ton of cheeses, but for just an all-around cheese I could just eat a piece of, unaccompanied, it would probably be cheddar. Don’t sleep on goat cheese though, I have a really good spinach-cranberry-rosemary stuffed chicken I make with goat cheese, easily one of my favorite recipes.

I lack much expertise but I once tried a bunch at a party with my French friend. He had a wide variety of cheese samples and I tried all of them at his suggestion.
Then I found my absolute favorite and it was apparently goat cheese. I forgot exactly what kind of goat cheese but I just remember being surprised that it came from a goat. It had the strongest smell and most pungent kind of flavor which went very well with the toasted bread.

  Tried looking up the various types of goat cheese if any look familiar and I think the one I tried might have been the Kefalotyri. It looks the most familiar to me and he was a cheese connoisseur with all these fancy cheeses so it was probably one of the best ones. It was hard and had a kind of off-taste and smell which might be off-putting to some people but I really enjoyed it.
