Pork can handle more heat than beef because of its higher intramuscular fat content. For me it's slightly pink if it's a cutlet or loin medallion, otherwise I prefer pork done but not too much overheated and dry.
That is a fantastic way to cook food. My husband and I love preparing some of our stuff this way as it is always perfectly done. Beef filets are awesome prepared like this.

Pork has only been safe to eat "medium" since porcine worm infestation has been largely eliminated in commercial pig farms. That's only in the last 20 years and is not a global thing yet.
As long as it's been cooked so any possible larvae are eliminated it's safe at any type.

FDA suggests minimum of 145 on pork to kill Taenia solium off because they invade the brain and will mess you up.

I smoke thick bone in pork chops at 250 degrees to an internal temp of 137 which I think is medium. Slight pink in the middle and it comes out so tender. Takes about an hour to cook and it's delicious. I might more medium rare if I bought the meat from a farm and not a supermarket. But I feel 135-137 tastes great. Steak I'm all for rare to medium rare.
I like to use pork squares for stew, browning them first before putting them in a slow cooker.

No. Pork is second only to fish for being dangerous when not thoroughly cooked. Iβd rather boil the meat to keep it juicy than to risk getting worms or bacteria from it.
