I've just popped a shoulder of lamb in the Dutch Oven and covered it in a blend of lemon juice, garlic, herbs and seaweed. It's going to cook low and slow for four hours until all the collogen has melted into a sumptuous goo.
I like the tougher parts such as shoulder or shank, they take longer to cook but hold more flavour and unlike the quick cook bits you can't really mess them up.
So do you prefer quick cook meat or slow?
