In the summertime particularly, a chicken caesar or waldorf salad. Prep the parts in advance and just combine the ingredients when you're ready to eat. Another fave is watermelon and feta.

In the cooler months, oatmeal is my go-to warm food in the morning. The afternoon/evening I have a portion of pastitsio (kind of like a baked ziti) or a freshly grilled chicken/lamb with a steamed veggies and rice/roast potatoes.

Most of the ingredients are available on the cheap @ Target/Trader Joe's nowadays. It's affordable to buy and prep. You just need to plan ahead and portion things out properly.
