I'm here on Girls Ask Guys, sharing my adventures with flavors and dishes from around the globe. When it comes to choosing a favorite, it's like picking a favorite child, impossible! But since I have a soft spot for Italian and Japanese cuisine, I'd say an impeccably prepared Risotto alla Milanese never fails to transport me straight to Italy. The creamy texture, the rich saffron aroma... it's a symphony in a bowl! 🍚 Yet, I can't ignore a beautifully crafted sushi platter, especially a toro sashimi, with its melt-in-your-mouth fatness that leaves you speechless. 🍣 Your lamb shank combo sounds divine; nothing beats a heartwarming, rustic dish!

Currently it's German Leberkäse made of venison that isn't good enough for a roast and fat pork. I guess next week it will be something else. Maybe cod, I didn't have battered cod for a while

Cumberland/Westmorland Tattie Pot, Hot Pot

Stew of sheep/beef with black pudding, potatoes and other vegetables. It is topped with a layer of thinly-sliced potatoes and baked until they form a crisp crust.

Westmorland Tattie Pot

2 lb best neck of lamb
¾ pints of stock
2 large onions
one or two black puddings (preferably ones without fat)
1 1/2 lb potatoes
Seasoning

Remove any excess fat from the meat. Peel and slice potatoes and onions. Slice the black puddings. Layer all the ingredients in a casserole dish, adding seasoning to taste. Top with potato. Heat the stock and pour in. Cover and bake in a moderate oven, 400F, 200C or gas mark 6 for 1 1/4 hours. Take off the lid and cook for a further 20 to 30 minutes to brown the potatoes. Serve with red cabbage, if possible.

Cumberland Hot Pot

2 lb potatoes
two large carrots
¾ lb shin beef
one large onion
One black pudding
¾ pt hot stock
Seasoning

Peel and slice the vegetables. Trim the beef and cut up with the black pudding. Put all the ingredients into a casserole dish and season to taste. Ensure that the top layer is of sliced potato. Cover and bake in a moderate oven, 350F, 180C or gas mark 4 for one and a quarter hours, then remove lid and cook a further 30 minutes or until the top has browned. Add more liquid if the dish appears to be drying up. An alternate method of cooking is for the dish to be baked for 1 3/4 hours with lid, then the top browned under a hot grill.

This tasty dish is one of those that have been popular in Cumbria (Cumberland) for almost two hundred years, being adapted slightly by each generation and still enjoyed in many homes.

Both are usually served with Pickled Red Cabbage.

I love so many... Pot roast, chicken pot pie, steak, salmon, chicken shawarmas with tabouleh, turnips, bruschetta, and lots of tzatziki with a little hot sauce.

But the ultimate dish for me will always be a burger.

A toasted brioche bun with either a beef, bison or crispy chicken patty. If it has the beef or bison patty, then cheddar cheese and if it's chicken then glaze it with a spicy Thai sauce. Then kale leaves, tomato slices, fried onions rings, avocado slices, and if it was the beef or bison patty, then finish up with some ketchup and mustard and if it was the crispy chicken patty, more spicy Thai sauce.

Always difficult to pick 1 favourite.

I've been a chef for 22 years so I like to think I can cook (I am not a Michelin-Star Chef or something; but I can manage a kitchen).

I prefer simple dishes:

If I had to pick one right now, it would be a butter basted souveed waygu with mashed potatoes, broccoli and eggs scrambled with cheese and a ton of pepper. Probably throw a canoli in there for good measure.
