It's a mess to eat such runny egg yolks in a sandwich even though they taste good. I prefer hard boiled eggs sliced with an egg harp with a little bit homemade mayonnaise. Chives, green onions, smoked salmon and black caviar are a good adds to egg sandwiches or tapas as well.

Finding a good one lately - though - is getting more and more difficult though. My dad would like that or scrambled with green pepper on toast.
Really depends on how big the risk of Salmonella is.
Here in the UK the risk is low... and thus it is safe to eat runny eggs.

Usually in the past it was eggs from my own flock so little worry there
I break two into a small frying pan after melting a good amount of butter in the pan, stir them to evenly distribute the yokes and whites, add salt and pepper, and fry them lightly on both sides until they are firm but still fluffy.

hey I've been in catering for years plus this is personal, an egg should be fried in a lot of oil so not to go crispy splash the yolk so the white is cooked on top and the yolk is warmed then place in the sandwich or bap and break the yolk and spread over and serve...

Only downside to runny is that it'll be very messy. But I've always done scrambled eggs on my sandwiches.
