My parents ate beef n i did too.
My ma would "call me to dinner" and lie it was ready! So i would come. While i waited, because she lied,
i could only eat vegetables. While waiting
But nobody believed liars! I stopped coming home when they called me.
Both my parents and my grandparents cooked most meals with vegetables. Some they even grew in their gardens.

Maybe they're healthy if you're eating meat from the 1970s that have no polyphenols and antioxidants, like is naturally in grass fed beef and wild caught fish. it's an outdated trope that they're necessary to be healthy

if you're not eating enough raw meat, or at least rare beef, you will develop severe nutrient deficiency eventually that affects how you think feel and act. if you don't eat enough vegetables, you miss out on anti nutrients, some debatably healthy polyphenols, pesticides and herbicides, and some vitamin K1. that's it. fiber? you can get it in its water soluble form bacteria actually feed on from fruits. what's ironic, the longer you go without raw meat, the harder it is to figure out you need it.
I take that last comment back: vitamin K1 is in beef liver and polyphenols are in wild or grass fed meats, along with 40,000 other potentially unidentified nutrients in meat like creatine, carnitine, etc that directly affects mental health, that aren't in plants OR in well cooked meat
now if you are cooking your meat to oblivion because it is raised in unhealthy conditions and toxic, then yes, raw vegetables will most likely offer you health benefits from the intact polyphenols, vitamins, etc
this is not because vegetables are inherently healthier than meat. I'd argue that today, vegetables are far more toxic due to pesticides and herbicides
