I really like most vegetables. My wife and I have some with every dinner. We grow quite a few ourselves. The ones we grow are 100% non-GMO and free of chemicals. They are grown in healthy, organic soil so that they are packed with nutrition. No artificial fertilizers. We make our own rich compost and raise worms for the castings to add to the soil. We also have a rabbit and add its pellets to the soil.
I love all sorts of vegetables. Life without a variety of veggies would be pretty bland and boring. I'm a fan of meat n potatoes, fish and fowl. But I love peppers and onions and garlic and broccoli and parsnips too. The variety of peppers alone is amazing... bell peppers, shishito, poblano, jalapeno, habanero, chilis, cayenne, Italian, cherry peppers, banana peppers. Red, yellow, and white onions. Lots of squash year round.
And lets not forget the fungus. Portobello, shitake, button, porcini, oyster, cremini. Whoever came up with the steak and mushroom combination was a genius.
Hell yeah! I love my vegetables even when I was a little girl especially green leafy vegetables, okra, soyabeans, colocasia, colocasia leaves, peas, drumsticks, peas, green capsicum, purple brinjals for making recipes that involves roasting them. I rarely eat potatoes.

From stir-fries to soups, vegetables really are the backbone of many memorable meals.
Since I follow a primarily vegetarian diet because meat gives me indigestion and diarrhea (a bit like Hitler), I eat veggies every day - raw, boiled, fried; in soups, sauces and various dishes.
The only exception is a slice of prosciutto every once a while and the fried brains which is my all time favorite delicacy.
From a nutritional perspective: I chose the option saying that vegetables aren't potat--- Uh, that potatoes aren't vegetables !
I have my favorites, it's difficult for me to find new ones. I'm mostly running a broccoli/carrot/tomato/pepper bell show. With the occasional and adventurous zucchini.

I usually eat non-starchy lower carbohydrate vegetables when I want to eat something to either help blunt a blood sugar & insulin spike or I'll eat them alone to not have a blood sugar or insulin spike so that I can stay more fully in fat oxidization mode. I do eat potatoes though. Mainly when I know that I'm less insulin resistant in the moment, to quickly blunt cortisol, or if I'm about to do a heavily carbohydrate & glycogen dependent workout within like 30minutes to an hour.
I have been craving lately. Craving real proteins and fresh fruits & veggies. I can’t get enough. Occasionally i crave soup, and that’s about as processed as i want anymore.
but I don't dislike many of them either, and yes... vegetables are part of regular diet and often mixed with other kinds of food, a lot of dishes are just like that...
Growing up I did not enjoy most vegetables. As an adult I realize that what I actually didn't like was steamed vegetables. Oven roasted broccoli... So much better than steamed. I eat a lot more vegetables after discovering that.
Oops I chose the wrong answer as veg is my source of nutrition as it creates the most dangerous, largest, strongest, tallest and longest lived land animals so must be the magic ingredient for life on the planet.
We eat a wide variety of "main stream" veggies. We don't sweat the eggplants or kiwis any more. We have a large salad every day. We are sure to include various colors, with each representing a different nutritional part of our diet.
