
Do you have a favorite soup?

i like the tomato bisque with basil olive oil at the Four Seasons Maui and the Oriental lentil soup with cumin at the Ritz in Aspen and the lobster bisque with anchovy at Caldera House in Jackson Hole
My favorite soup would definitely be gumbo, hands down. Some of my Cajun friends would deny, that it's a soup... haha.
But if I have to pick a soup I'm going with gumbo! Served over rice...

Red beet soup, Rye sourdough soup, mushroom soup. Generally base of every good soup is high quality broth, it makes 80% of taste.
Red Beet Soup? Sounds, er, appetizing? Never have heard of or even seen a recipe for it. 🤔
- 300-500g beef soup meat (bones and fatty meat)
- 2 big carrots
- half of a celeriac root
- 1 leek
- 1 parsley root
- 1,5-2kg red beets, the more red the better. (chopped in 2cm cubes, use gloves)
- 3l water
Spices: 6 Allspice, 4 bay leaf, 1ts green or white pepper corns, 3-4 garlic cloves, 3 ts salt, 1tbs white vinegar 10%, 3 tbs sugar, 2 Maggi spice cubes, 1 tbs real marjoram (not dost that is false marjoram)
Cook a broth on small flame or low power in slow cooker around 5 hours. Take just the stock, remove meat from bones and put it back. Roast garlic cloves god brown in small amount of butter put it into stock, add marjoram, sugar, vinegar at the end to get round taste balance.
Optional: Add already cooked whole red beats sold in packs (french salads use it) or red beat juice to get more beat taste. Look in stores for "Red Barszcz" instant soups (if available in your country) Polish stores have it very likely. 2 packs of "Winiary Barszcz czerwony" give the soup very specific taste.
So with the beets, does that make it sweet?

I used to work at Claim Jumper and they had this potato cheese soup with bacon in it. It was the best.

@Staximus Probably, but who has the time to make it? The ingredients would cost more than a can of soup and take an hour to make.
@Staximus That part is true. You just need to have the room in your freezer. I rarely eat anything twice in a row, so no leftovers, unless it is really good or pizza.
