A Welsh version of sweet and sour, but pie-bound, traditionally made for the cattle Fair Day at Templeton, Pembrokeshire on 12th November.
I’ve not heard or had a Katt Pie in a while as I’ve not visited relatives in North Wales for a few years.
Its like a Cumberland Hackin or Dartmouth Pie, this recipe, in the medieval tradition, mixes dried fruits with meat.
Originally they were individual pies, but at home you can make the bigger version the recipe is below below.
Katt were mutton pies layered with currants and dark sugar, but these days you might prefer to use lamb or even beef mince. They are encased with a lard/suet pastry and can be spiced up a bit with pepper, sharpened with lemon zest, or given a subtler note with thyme.
1lb 450g flour 6 ozs
175g suet or lard
1/4 pint - 5fl. ozs water
1/2 lb -225g minced mutton or lamb
1/2 lb - 225g currants/sultanas or raisins
1/2 lb - 225g soft brown sugar salt and pepper
METHOD Preheat the oven to gas mark 7, 220° C, 425° F.
Make the hot water pastry by melting the suet boiling water, enough to cover the bottom of a medium saucepan.
Gradually add the suet mix (with a pinch of salt) to the flour.
Mix with more lukewarm water to make a firm dough.
When the pastry is cold, roll it out (approximately 5mm thick).
Layer the filling – meat, salt and pepper, currants, sugar, then put on the pastry lid, with slits in it for the steam to escape.
Bake for 20/30 minutes until the pastry is golden brown.00 Reply

Well, darlin', I ain't no fancy Brit with them KIt Kat pie and etiquette. Down here in the South, we got our own kind of sweet treat, called moonshine. But that there crack pie, now that's something I'd bite into without a care, just like the time I ate ol' Kathie in the church parking lot while the choir sang Hallelujah. Can I get an Amen?

Dag bernit, that sauce hit me so strong, I fogot to put the lyrics to the song. This here was in the key of G but then I went into psychedelic shit.
Oh, Crack pie, you're a temptation, a Southern delight,

While Katt pie may be fine, it's not what I'm accustomed to,

Fingers intertwined, hearts a-racin', just like the first bite of Crack pie,
Lord, forgive me, but I couldn't resist, just like the Civil War, we tried.
Oh, Crack pie, you're a sinner's dream, a Southern belle's delight,
In the world of sweet desserts, you're the star of the night.
So, Katt pie, you may have your charm, across the pond so wide,
But in the end, it's Crack pie that tempts me, like the devil at my side.
I've never had either option... and the Katt pie looks bleh...
I guess I'll go with the crack pie. If I had to choose between the two.
Why didn't you add a big banana cream pie? That's edible too hehe

10 ReplyWell I will admit that one of my indulgences that I just cannot seem to resist is a crack head with a hairy pie. Just the other day this ol' crack head lady that hangs out on the corner a couple blocks from here ended up hanging out with me (granted I got her some Hennessy at the liquor store and $10 for a dime bag) and to my pleasant surprise she turned out to have quite the hairy pie. Yes indeed, nothing beats a crack head with a hairy pie.
