So east vs west indies cuisine. They both have bold and very well seasoned flavors and tropical with their own kind of vibes. It made me think of this when I realized how Filipino cuisine was almost going to be like Caribbean or maybe Latin American cuisine when the first explorer Magellan planned to cultivate spices in the Philippines from the Moluccas island which contains cloves, nutmeg, and mace and he might cultivate more spices other than that. But he lost and got killed there which is why it never happened. Spanish influence with many spices and it's tropical would've given it such vibes (but with Chinese). Unfortunately the new Spanish explorers never had the same goal and with us further away from India, that's why we don't have much spices compared which resembles more Pacific Islander cuisine some with Asian, Spanish and Malay influences of course.
