Do you like hot sauce that has vinegar in it or prefer one without vinegar?

Making hot sauce is my hobby and I have been trying a few different versions. I am not talking about salsa. I do not make salsa, I make hot sauce. Salsa is mostly vegetables and hot sauce is mostly peppers.

I love hot sauce and definitely try to find those that aren't vinegary. Flavored vinegar isn't f'ing sauce!
Hot sauce full of vinegar was a pet peeve until I finally found some that aren't. I like them rich and flavorful.

I got advice from friends and coworkers, watched YouTube videos, and read a lot of recipes online. I guess it all depends on what style of sauce you want to make and what peppers you are using, and how hot you want it. Also how much you want to make, how long you want it to last, etc. I just started by throwing raw peppers in the blender with salt and vinegar. Then I started adding a little onion and garlic. Then I started fire roasting the peppers. Sometimes cook some ingredients, sometimes cook or roast all of them. Sometimes I'll simmer the sauce for a while and add the vinegar at the end. I make many different kinds. The more vinegar you use, the longer the sauce will stay preserved. I always make the sauce about 25% vinegar at least so I know it's not going rotten. More vinegar will mask the subtle flavors, but that doesn't matter if you like the sauce hot as fuck. If it's mostly peppers the flavors will still come through.
