But it got me thinking, in the UK cauliflower cheese is a common side dish while in America it's mostly mac & cheese. Am I right?
So which do you prefer?

I like both but I lean to Mac and cheese. While I like them, I don’t love them.
For vegetables, I have raw baby spinach leaves (1 to 2 ounces), 5 baby carrots mixed with fruit (frozen berries, sometimes with a banana), Greek yogurt, a bit of water or ice, everyday in a smoothie using a Vitamix. These taste wonderful actually due to the fruit and yogurt. They appear as purple or an off putting green but don’t let the color (no “u”) trick you as they taste great and so much better than trying to eat a big salad everyday.
I have no clue what Tatws Popty means? lol. Cauliflower/Broccoli with Cheddar is common, back when I was kid, Cream Cauliflower or Broccoli was very popular. I make mashed Cauliflower instead of potatoes sometimes!. Anyway, the important thing is your are eating more veggies!
Tatws popty= a layer of mix root veg in a dish followed by another layer of potatoes. You half fill with stock and bake until cooked.

Cauliflower with cheese. However I would prefer in butter roasted breadcrumbs to soft cooked cauliflower.
I'm not a fan of mac & cheese. It's like low quality rigatoni Gorgonzola sweet cream sauce

Seeing the composition as a whole, I don't think that your pound or two will leave any time soon :)
I don't think that these two dishes have much in common. Where I'd clearly prefer the non consumerist traditional approach.
I prefer cauliflower cheese, never really liked mac & cheese even when I lived in the US for 10 years, the couple if times that I tried and liked it it was freshly made from scratch with decent Cheese, NOT the packet variety with cheese flavour and plastic cheese on top.
If you're going for healthy then Cauliflower Cheese is the better option. No carbs, plenty of fibre and healthy fats and protein. If you mix cauliflower and broccoli and add bacon bits/diced bacon it can be a main not a side dish and it's delicious!
I know a woman who feeds her family cauliflower instead of rice. It's just not the same.

Fennel gratin. I quite like the cauliflower because my grandmother made it so well. But fennel is better. Mac and cheese is fine for a quick meal, but not nutritious.

Yes, I'll often dust cauliflower with curry powder and roast in the oven
LTNS. And I'd have to say neither because they're both gross. If I need more greens I just get a bunch of salad.
