It's been around since the caveman. Cooking meat over an open fire. But the Taino Indians of the Caribbean are attributed to its origin. The Spaniards liked what they saw in the way they used a wooden wrack to smoke their meat. I guess from there they started messing with the sauce. And without the sauce, it's not really BBQ.
Its basic form, is believed to have originated in the 1600s, with early recipes likely including lime juice, hot peppers, and vinegar. These sauces were initially used as simple seasonings for barbecued meat. The earliest specific recipe for a "sauce for barbecue" appeared in a cookbook in the U. S. in 1867. Over time, barbecue sauce recipes evolved with the addition of ingredients like mustard, tomato, sugar, ketchup, and Worcestershire sauce, resulting in the diverse regional styles we see today.
