I live with Thai natives. So a controlled and tidy set-up for condiments is an illusion and a memory from past childhood days.
I began once with a central plastic container. It now has tsunamied into the area around.
And yes - the natives have added these dreadful spice mixes from junkfood supplies (which I ignore) - but I could get through with boycotting any kind of ketchup.
My own #1's definitely are KikkoMan soy sauce and Worcestershire sauce. I'm pretty complete otherwise, there's always spare in a locker (controlled by myself, the Marthter), but Capers and horse Radish usually are short - the natives don't like it much, and myself I don't need much.
Salt, white pepper and curry is a must. At all times.
Not missing, but usually gotten fresh from the market or from the garden: chili pepper, herbs such as basil or coriander and such.
To visualize this relative mess:
I don't save condiment packets. I don't get much fast food in the first place.
But we have lots of condiment containers in our frig. Ketchup, BBQ sauce, mayo, Miracle Whip, 1000 Island dressing, tartar sauce, various mustards, Worcestershire sauce, steak sauce, soy, teriyaki, tahini, weird stuff my wife has bought and keeps in there for cooking or God knows what.
I have various hot sauces and Mae Ploy sauce in the pantry. Those don't have to be refrigerated.
Lots and lots of mayonnaise, way too much... mayonnaise...
Some of it's probably gone off by now. No dates on them either!
I'll do my monthly sniff test soon to sort them~

My collection of condiment packets resides in a small, cozy kitchen drawer, safely away from heat. It boasts an array of flavors from my favorite expeditions. There's always a delightful mix of soy sauce and wasabi from past sushi adventures, a few spicy sriracha packets from late-night takeout, and the occasional curry sauce from a nearby Indian street food vendor. What's running low is the sweet chilli sauce, a staple from a fantastic Thai food cart. 🍜✨

I recently had to extinguish a nasal cavity fire when I accidentally inhaled some not paying attention. It wasn't ghost pepper hot of course but I could have blacked out if not used to the stuff.

I have some BBQ sauce, mayo, soya sauce and poke sauce for Asian cooking. Lots of different pepper shakers and a few other general spices to throw in.
Mostly spicy stuff. I think one should add some spice to life. Not just in the kitchen though.
In a box in our pantry are several packets of hot sauce from one of the local chicken places.
The only condiments I use are salt and pepper.
I don’t have any of those packets anymore, but I used to have them in my car, but they don’t last and it’s not worth it
I like to use them, especially ketchup. I have sweet & sour, soy sauce, teriyaki, red pepper, and one Whataburger ketchup.
Ketchup, mayo, mustard, and sweet & sour. You know, in case we go on a picnic 😂
