
How do you like your steak?


I want my meat more than well done. I want it dead, almost charred. Only then will I know that the possible pathogens in the meat have been annihilated.
Eating raw meat can pose significant health risks due to the potential presence of harmful bacteria and parasites, which can lead to food borne illnesses.
If the meat I ordered in a restaurant is the slightest pink, I will not hesitate to return it and ask to have it grilled more.
Charred meat is equally unhealthy. When cooking over high heat, especially an open flame, you are exposed to two main carcinogens: heterocyclic aromatic amines (HCAs) and polycyclic aromatic hydrocarbons (PAHs). Studies show HCAs and PAHs cause changes in DNA that may increase the risk of cancer.
