In the UK, the Food Standards Agency inspects cafés and restaurants and ranks them 0 to 5 with 5 being the best. Anything less than 3 is pretty filthy, and a 1 star is likely to get you in the local press.
By law, the rating must be clearly displayed in Northern Ireland and Wales, but not so in England. However, it's generally accepted that if a place doesn't display, then you should expect rat droppings in your food.
I'm going to assume a lot of other countries have something similar. So when you see the hygiene rating on the door, how low of a score do you tolerate?

Maybe. I wouldn’t predicate my choices on the word of an organization of strangers anymore than i would do so on that of a random stranger. People are fallible and sometimes flat out corrupt. Therefore any organization of people is just as likely to be fallible and/or corrupt. I might consider the report more reliable if someone i trust works there and has input about both the reporting organization and the subject of the report. As an example, i used to consider the “Better Business Bureau” rating fairly strongly in my choices of where to spend my money. Then i has a bad experience at a restaurant with an “A” rating that aligned with the story of a friend of a friend who suggested that the BBB could be bribed to improve a rating. I haven’t used it in so long now that i don’t even know if BBB is still a thing.
The restaurant would probably be shut down for the first two. They might get a warning first and have to fix it in a certain time. But if they didn't fix it, they'd be shut down.
I've known about multiple restaurants that got shut down permanently for a lot less. I worked at one of them that got shut down.
absolutely not, considering I work at a restaurant and the inspection people in my city are pretty strict… the give us low ratings for the stupidest things so a restaurant with really low ratings is, well, cockroaches, and meat not refrigerated at a proper temperature and fungus growing under the coffee machine
We don't really have any restaurants close by here but I don't like anyone cooking my food except someone I know and trust anyway. However, I really love picnics and don't mind eating out in the dirt and ants and insects that occasionally land in my potato salad and I prolly eat it anyway without noticing.

Some cities here have their own health department and then some are inspected by the county. The restaurants inspected by the county have a A, B, C and D rating. The C on the sign is red. Once you're in the red zone, you're gambling with your life.

Yes I do eat at restaurant that has a low clean rating, the prices are very cheap and the food is very good. The restrooms are always dirty. It is located next to the Humane Society in my town. All you can eat on Friday and they specialize in pulled pork.
Years ago I used to deliver food to a lot of restaurants around my area. I know what the back rooms and kitchens looked like. I haven't stepped foot into the restaurants that were dirty. A couple of them closed up since then, I guess the board of health had something to do with it. No i wouldn't eat in a dirty restaurant
I strongly prefer the highest rating unless it is a Mexican restaurant. There I will go mid-tier as those are the best Mex restaurants in my experience for some reason.
