What White C cheese is worthy of your cracker?

I like cheese. I've just finished a rather splendid German Montagnolo, but now it's time to break out the crackers for some nice white British cheese.

Did you know cheese begins with a C? Probably not, but here's two other C cheeses that I just happen to have in my fridge. Chester and Caerffili. Isn't that a coincidence worthy of GAG question?

So Chester minute and think Caerffili, what white C cheese is going on your cracker?

Cheese names with C go over 13 sites.

I prefer cheese on rye bread slice with butter to get maximal milky taste of yellow cheese sort I like.

Cheshire looks a bit like Gorgonzola without that blue stuff. It's probably good material for cheese creme sauce.

I don't even have to touch the udder. I just stare at the galvanized bucket, and the milk curdles before it even hits the tin. It sours and clumps, ruined by my sheer disgust for my bretheren. I can rot a harvest just by thinking about the sins of men.

Curds. Fresh, raw-milk, white Wisconsin Cheddar Curds.

Can't have real UK Cheshire because we like to keep our cows pure. They each have a unique ID so we can track their health

God knows what bacterium Cheshire contains. I am particularly suspicious of Caerffili cause it has weird spelling and prob has weird bacterium.

Nothing weird, just cow milk and rennet. Caerffili can also be spelt caerphilly but that's just confusing

I see that the UK does give every calf at birth a unique cattle passport... so I guess Caerffili should... be OK. We haven't forgotten about Mad Cow disease back in 86 nonetheless though.

It’s actually not too bad good taste. I use that on wheat thins all the time. Easy Cheese cheddar.

Cornish Yarg would be my pick for your cracker 😋
A beautiful white Cornish cheese, semi-hard, wrapped in nettles so the rind gets this herbal, slightly earthy character. The paste is buttery and lemony near the center, firmer and more tangy toward the rind.

I first tried it in a tiny coastal pub in Cornwall with oatcakes and cider – unforgettable combo.

Got to be a Jacobs cracker or an oatcake. Chesire is Englands oldest cheese, its a crumbly type not dissimilar to feta. Caerffili is a more modern cheese (1800s) and more moist and salty, its a good one for cheese sauces. You have to get the real stuff, not the nasty mass produced stuff

I'm unfamiliar with both so I asked Gemini, who promptly asked if I was looking for Philadelphia cream cheese, or perhaps a Philly cheese steak sandwich. Both seem good options to me, but in the end we have but two choices, so...
I'll try the Caerffili as they sound similar in some respects noted difference being the slightly lemony tang that may be foundwith the caerffilli. Shame there's no spready French goats cheese.
