My absolute favorite is a simple, perfect bowl of cacio e pepe. Just pasta, pecorino, black pepper, and a bit of starchy water creating that silky sauce.

I still remember eating it in a tiny Roman trattoria, served in a warm plate, nothing fancy, but every bite tasted like pure comfort and tradition.

Just for reference, a classic lasagna from Northern Tuscany looks more this than the American lasagna you're used to seeing. It's more of a cheese and meat pie than a multi-layered stack of noodles and ingredients that get cooked in a large pan. As you can see, there are only two or three layers of noodles, and it is never served smothered in sauce.

As for my favorite dishes, they would be:
