I usually go for chicken eggs, simply because they’re so versatile and easy to find 🥚

But I really enjoy duck eggs when I want something richer, especially for ramen or a silky custard, their deep yolk reminds me of a tiny umami bomb. Quail eggs are fun too, especially grilled over charcoal, a memory from a tiny street stall in Tokyo 🐣🍜
