I think it generally has to do with not wanting to seem vulnerable. Showing someone your true self and feelings can be scary because there is always a chance of getting hurt by that person and feeling regretful of telling him things that you don't normally tell people. Unfortunately, hiding feelings can be what actually hurts the relationship in the end.

Another major reason could simply be shyness. Shy girls need time to feel comfortable and really trust someone before letting that person in.

I used to have the misconception that guys don't like girls who are emotional so I used to try to be neutral until I met the right guy.

It would make us feel conscience about stuff we tell. We might not want to say our feelings because it would hurt us.
