I was briefly with this girl and I saw her by chance today at the mall. She saw me too and she blushed. Why did she do this?
We don't talk anymore but yeah I'm just curious as to why she would blush

She could have felt surprised to see you again the moment you saw her. 2nd guess is that she wanted to talk to you but felt shy about making the approach when she saw you (so cute!!). And lastly there’s a high chance she still has feelings for you. I don’t find it a bad thing about the situation I find it to be adorably sweet that she blushed when she saw you. if both of you do see each other again, there’s a chance one of you will make a conversation.
