I've never sent an emoji on accident- my guess is that she sent it out of excitement and then regretted it and so lied that it was an accident. I've done that before, I send a text or something to a friend that I like and then immediately regret it and so I say I'm sorry and that I didn't mean to.
But then of course there is the chance that she's telling the truth, you just have to go with your gut because you know your friend better than anyone else on here. Is she honest, or not? Has she ever shown any signs of liking you, or no? There's a serious possibility that she likes you, just pay closer attention to her in the future to see if she makes any more moves.
Its very easy to mix emojis. Specially if she sent from the recent emojis. It happens a lot. It probably meant she was texting someone recently with whom she used that emoji. Boyfriend or sometimes even girls use that emoji with their girl friends.
I wouldn't make too much of it.
