You're actually on the right track by accepting that womens feelings are unstable, however there are a couple more steps.

1. Ignore what women say - You should only judge women by their actions most women when dealing w/ men say whatever they "feel" at the time. Ignore that and pay close attention to what she does.

2. Understand how you make her feel - in my opinion I have been widely successful W/ women most of my life for one reason. I understand how to take advantage of how a women is feeling. If you then understand what actions you do that trigger these feelings you will realize how easy it is to be successful w/ them. (This is an advanced strategy and I wouldn't recommend trying this until you've slept with at least 25+ women) Good luck.

Let her know when you're reaching that point.
Stop when you've reached it.
She'll tailor her stability or you'll walk.
Either way, your limits will be clearly and succinctly communicated, as will the extent of her stability.
If you're labeled "insufficient," then walk, else you will be drained of all life force and become quite resentful.

you have to communicate. say what you feel and she should say what she feels, what bothers you. find solutions by discussing. if you get angry don't argue immediately. Calm down thing rationally and then discuss. When you are angry you say things you don't mean.

Well without knowing what the argument was about I would say learn what her triggers are. Also learn how to read subtle clues that would indicate a change in mood like facial expressions and body language.

Sometimes woman become unstable due to what they went through or because of a person. Soooo try to figure out the root of the problem and fix it. Maybe she feels insecure in the relationship and is acting crazy (ps i have doen this) maybe she wnats attention and is acting crazy.

That's a myth actually, women are not more emotional than men, how ever the ways that those emotions are expressed do differ.

The best way to deal with it is to communicate in a way the doesn't make the other person feel like you are attacking them.

It basically comes down to good vs. Bad. All women have a bit of crazy in them. All women are completely irrational at times. But how is she those other times. Does she try to curb her craziness at all? Or does she try to blame when she acts crazy on you. The best women know they're crazy and will own up to it when she let's it get the better of her, and will apologize. The women that aren't worth keeping are the one that never acknoledge it and worse blame you for it.

This is a tough one I think all us men have to deal with to some degree. You have to be considerate and understanding, especially certain times of the month.

But women need to be able to control their behavior, even when their moods are shifting. Some are better about it than others. At the end of the day, if she can't control herself to a reasonable degree, you're better off finding one who can. They do exist.
