Because the are trying to avoid confrontation. Ultimately it boils down to them not be mature enough to be honest with people. Because if the shoes were on the other foot, they'd feel the same way, but most women never think about it from that angle.

Probably because so many dudes get angry and abusive when rejected for not fitting the girls' preferences. It is easier to just say, "I have a boyfriend." Some unmarried women even wear wedding rings so that they can avoid the unnecessary drama.
