I’ve been hooking up with this really cute 21 year old for a few months now. I found out today that she has a boyfriend she’s been dating for years. This happens way too often in my experience, any opinions ladies?

Same reason that SOME guys cheat. It's taboo and therefore exciting, they have no respect for their promises or the people to whom they made those promises, and they simply didn't know what to do when they discovered that being in a relationship was boring to them.
