Why do so many woman avoid being blunt about what they want?

Depends on what it is.

Something like sex for instance we don't bluntly say what we like or want because we are called slut, whore, trashy, thot, low value.

Other situations if we bluntly say what we want then we'll be called demanding, bossy, bitchy, karen, entitled, feminist.

So that men can’t adjust themselves to what we want. If he knows what the woman is looking for he can fake it and make her believe he’s everything she wants to get in her pants or just manipulate his way into her life and then after x amount of time receal his true self. Then she’ll have wasted lots of time, energy and emotion on him. In worst case scenario she’s married him or had kids by him. Some men don’t show their true self until after they feel the woman is trapped. It can be weeks, months or years depending from case to case. Some mean don’t reveal themselves until they’re married or the woman is pregnant or have given birth.

Also, because lots of men get offended and butthurt whenever a woman says what she wants and will get rude or aggressive trying to start arguments or question and talk her out of her standards.

To avoid judgement and/or because a childhood of having their feelings constantly disregarded. You can help by showing that you aren't judgmental (showing, not just saying) and by showing that you sincerely care about their input. Showing and saying it.

Partly bc we’ve been taught to put the feelings of others before our own. Partly because we’ve heard the stories of horrible things happening when women assert themselves too much to men who don’t accept it

Because they learned at an early age that "good" girls don't talk about such things.
