what do guys mean when they say that they like the way a certain girl carries herself?

thinking her ish don't stink, etc. You can tell by the way a girl talks to people, how nice she is, what she does on a daily basis. It's one of those things you kinda pick up on, there isn't any real trick or skill to it.

If she "carries herself" i.e. not being carried by anybody else, it means that she's clearly confident of her own ability and image.
