i always catch I'm looking at me from a distance but within the past few weeks things feel different. He usually responds with a "hey, (my name)" sweetly, but today it was a cold "sup" and no smile. Does he not interested? is that a way of being friend zoned?

Meh, its probably one of those days. Im usually cheery at work but some days, i just walk by and not talk to anyone.
Also another thing that girls especially the young ones seem to forget and it irked me throughout my teenage years is...

He probably did not feel up to be social today. I used to say hi to my crushes coldly if I was not up to being social that day. Do not assume he is not interested or friendzoning you after just one day of talking to you differently.
