I was talking to a guy online on hinge and we was talking on the phone then he asked me to follow me on Instagram and next thing you know he blocked me on Instagram and the hinge match has disappeared

He may have seen something on your social media that drove him away from you. Or any other, well- or ill-grounded reason.
It happens many, many times, nothing to get alarmed by.
