Because now he is aware of how she feels, and is doubling down on setting down the boundaries. If he believes that it might not have been clear for you before, he will go out of his way to make clear the dynamic now. You can call it overreaction or not, but that is a lot of times the response.

The only reason I can think of why someone would would start acting funny (more details on what the "funny behaviour is would be good) in this situation is because he wants to make it clear that he is not interested and is doing his best to put her off. He also more than likely feels uncomfortable now and awkward as being friends then one of them wanting more than that is going to put some awkwardness between them especially when thre feelings are not mutual.
