How do you know if a guy who has a girlfriend is low-key interested in you?

I think it is really weird but sometimes I have seen it happen, that a guy is interested in a girl although he might already have someone in his life. I have had a friend like that and although nothing happened between us he had crossed my boundaries by flirting and sending me inappropriate pics of himself. Of course I had to cut that friend off my life because he had disrespected me.

I have this new friend that I know for a few months and although he is nice, I sometimes think he's maybe too friendly considering that he has a girlfriend. He said he wanted to meet outside of school (where we have always met) and said he had noticed I was offline for a few days. Not saying that I know this for 100% but just seems weird if a guy is making time for you outside of his working time to meet outside of school. Again, I'm only asking because I don't want to be caught off my guard if he proceeds in a way I don't expect

Unless he is doing blatant things then I don’t search for low-key “hints”. Reading too much into their behavior only leads to assumptions, assumptions require extra analysis to confirm and why spend time/energy doing that when he’s not single? I’m just going to stay in my lane unless he makes a real move on me.

I wouldn't either. But I just want to be intuitive just in case. People are very impulsive and you gotta be prepared

Being intuitive doesn’t necessarily prepare you for someone else’s impulse. Especially in this case where you’d be purposely waiting for another random hint, which to me says you may already know he’s interested and it’s no longer low key on his behalf, instead it’s now blatant.
