I'm laid back, I keep to myself, I don't interact with either gender, I don't flirt with the opposite sex
& Yet many men with 9-5's/families/wives have said (overheard & told) that he can't "fight" or "can he fight?"
I did grapple back in MS/HS & did a few years of some MMA
I "never made it" as in professional nor amateur but still held my own
What do these particular men want from me?

Curiosity or concern I'd assume.
Either you don't look the type at all and they are concerned for you. The extrapolated assumption being that you struggle to fend for yourself in more areas than fighting.
Or, and this is seemingly much more likely, you do look like you can throw down. It could be as simple as a certain way of walking. After all most of us can easily tell apart which guy is and is not a fighter - although everyone will be wrong sometimes. If you look convincingly so they are confirming an assumption. Its normal to be curious. If someone looks like they make the best guacamole in town I will certainly try to find out.
Let's assume that they annoy me to the point that we bump heads & let's assume again that I beat them with some trouble
What then? I'm curious because I've been hearing this particular myth that most guys apparently become "best buddies" after fighting?
This definitely won't happen with me

Its a somewhat common phenomena. Maybe a little more oldschool. Nowadays you are as likely to get stabbed by five guys you never saw before as you are to make friends.
But yes. After fighting, emotions tend to settle and quite often the idea of grabbing a drink together and laughing it all off seems sensible. Speaking from a bit of experience. Not a lot of course, but some.
But what if I don't care for the man "testing" me & just stroll off?
Would I get snitched to the cops?
Hard to tell dude. Go square up with one and find out.

Do men also gravitate towards "alpha" types like women?
I don't believe in that alpha crap, so I really couldn't say.
The reason I ask is because most dudes for the most part always either want to fight me or "break me"
But at the same time these same dudes always chill with "alpha" types
